APPLE-BANANA LOAF W/ A ZESTY CITRUS GLAZE

Apple Banana Loaf: All flavors of Apple bananas you love made into a moist Loaf, topped with peanuts, coconut shreds, and glazed with zesty citrus syrup.
It’s our favorite time of the year. The summer heat is gone, no more dry hot days, no more going for a swim at the nearby creeks and rivers, or even for a hike in the Mountains. No more refreshing drinks while taking a stroll down memory lane with a close friend or even your lover. No more hot, sunny days at the beach getting a tan, chillin’ in just bikini’s and shorts. Yes, say goodbye to your lovely tans!
No more! Ok wait…who are we kidding, nothing is going to change, especially having drinks, or strolling down memory lane, we know firsthand that’s not true! But the weather IS changing; the mornings are cold and nights even colder. It is the perfect weather for your favorite cup of spiced coffee or tea in the mornings while cuddling with your significant other – or pet – or blanket? [if !supportLineBreakNewLine] [endif]A cup of tea or your favorite coffee on its own is never enough on these cold mornings/nights, so we came up with the perfect recipe to slice up and pair with your favorite hot drink!



We all have that one family member or friend who, when they come to visit, they always bring a gift. (Yes, THAT one friend you just thought about). We had one of “those” friends recently stop in, and they brought by a stock of full, yellow, bursting, and ripe apple-bananas. We ate a few of them (because come on, they’re delicious). We gave some away and STILL had more! They were so ripe and ready, and at this point we didn’t want them to go to waste, so we decided to put them to great use, and make a delicious Apple-Banana Loaf. We are SO excited to share this delicious recipe with you guys!

WARNING : You may want to make a double recipe - OR hide this loaf once its finished baking! We found out the hard way that once introduced to family members, it tends to disappear VERY quickly!
Here’s what you’ll need to start baking
Apple-banana Loaf (Batter)
Prep Time – 15 mins Cook Time – 55 mins Yield - Makes 1 loaf
6 ripe Apple-Banana
2 eggs
1 ½ cup Flour
½ cup coconut oil or Butter
½ tsp Baking powder
1 tsp Baking soda
½ cup brown sugar or ¼ cup honey
¼ tsp salt
1 tsp vanilla extract
½ cup coconut milk
Nut topping (recommended!)
1 cup Crushed peanuts
½ coconut flakes
(* Note: for those of you with nut allergies, you can add your own assortment of toppings)
Zesty Citrus Glaze (Must Have!)
1 cup freshly squeezed orange juice
1 tsp orange Zest
1 cup brown sugar
Let’s start by
Preheating the oven to 170 Degrees C (340 degrees F) and lightly greasing your loaf pan (we used coconut oil)
In a large bowl, combine flour, baking soda, baking powder and salt. In a separate bowl, cream together coconut oil/butter and brown sugar/honey, whichever combination you decided to go with). Mash the Apple-bananas, stir in eggs and vanilla extract and mix until well blended.
Lightly mix both mixtures from steps one and two -- together into one bowl; Try not to over mix, then pour batter into prepared loaf pan.
Combine Peanuts and coconut flakes – and gently sprinkle it on top of your un-baked cake before placing in oven to bake.
Bake in preheated oven for 50 to 55 minutes.
Zesty Citrus Glaze: While your cake is baking in the oven: in a small saucepan, combine orange juice, zest and sugar together. Bring to a boil, reduce the heat, and simmer until the sugar has dissolved, about 5 minutes, stirring occasionally. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. This mixture will thicken upon cooling.
Until a toothpick inserted into center of the loaf comes out clean – once it comes out clean, this means the loaf is finished baking. Let bread cool in pan for 10 minutes when finished, and then take out onto a wire rack.
While on the wire rack, brush a Delicious amount of the zesty Citrus Glaze (you made) on top of the loaf for a touch of flavor that’s gonna’ drive your taste buds wild!
